Cucumber and Avocado Sandwich

Cucumber and Avocado Sandwich-this fresh and simple vegetarian sandwich is made with cucumber, avocado, lettuce, sprouts, and herbed goat cheese. It is great for lunch or dinner.
Did you know August is National Sandwich Month? It makes sense, it’s too hot too cook, it’s back to school time, and summer gardens are overflowing with fresh produce that are sure to enhance any sandwich. August really is the perfect time to get your sandwich on!
I am currently loving this Cucumber and Avocado Sandwich because it is fresh, simple, and the perfect meal for a hot summer day.
To make a good sandwich, You HAVE to start with good bread. We love using Dave’s Killer Bread, it is our favorite. For this Cucumber and Avocado Sandwich, I like to use their 21 Whole Grains and Seeds bread. It is loaded with whole grains and seeds. Each slice is packed with five grams of fiber and five grams of protein.
To make the sandwich, I spread herbed goat cheese on the slices of bread. Make sure the goat cheese is at room temperature so it spreads nice and easy. If you can’t find herbed goat cheese, you can use regular goat cheese and stir in some minced herbs. Basil, rosemary, or thyme would all be good options.
Next, I layer the sandwich with green goodness: lettuce, cucumbers, avocado, and sprouts. I also give the cucumber slices and avocado slices a little squeeze of fresh lemon juice. It keeps the avocado from browning and it also gives the sandwich a lovely burst of lemon flavor. Season the sandwich with salt and pepper and enjoy!
I love the green layers! This sandwich is great for an easy, no-cook lunch or dinner and it is a great way to use up those garden cucumbers.

Cucumber and Avocado Sandwich
Ingredients
- 4 slices Dave's Killer Bread 21 Whole Grains and Seeds
- 4 ounces herbed goat cheese at room temperature
- 2 Romaine lettuce leaves washed and dried
- 1/2 of a large cucumber peeled and sliced
- 1 large avocado peeled, pitted, and sliced
- Squeeze of fresh lemon juice
- ½ cup alfalfa sprouts
- Salt and black pepper to taste
Instructions
- Spread the herbed goat cheese evenly on all of the slices of bread. Take one of the slices and top with lettuce, cucumber slices, and avocado slices. Drizzle a little fresh lemon juice over the cucumbers and avocados. Add some sprouts and season with salt and black pepper, to taste.
- Place a piece of bread, goat cheese side down, on top to sandwich all of the fillings together. Repeat with second sandwich. Serve immediately.
- Note-if you can't find herbed goat cheese, you can add herbs to plain goat cheese or just use plain goat cheese. This sandwich is best the day it is made.

Where is anybody able to find sprouts? I’ve been looking for them for months and none of my grocery stores here in Seattle seem to carry them anymore.

You can purchase a small starter kit to sprout your own at home for under $20 at most Ace Hardware stores.
I have the same problem! no grocery store in the greater detroit area that I can find (even the jimmy johns which has them on the menu doesn’t have them avail for customers)

I got the sprouts from Food maxx. It’s a store that sells international food I don’t know if you have those in your area. Also a lot of stores would order stuff for you even if they don’t have it in stock you just need to talk to the store manager
I found three types of sprouts at my local QFC.
If I don’t like goat cheese and not a huge fan of cream cheese either, what else could I use 🙂 Can’t wait to try this!!
Do you like those Laughing Cow wedges – I think they would work as they are spreadable. Otherwise you might just try a little mayo?

Almost every day I have an avocado, smoked gouda and spinach wrap with a bit of mayo. This is a great way to switch up my fav without too much effort 🙂

I love alfalfa sprouts but I can’t find them anywhere! I’ve looked at Trader Joe’s, Whole Foods and both of the super markets in my town!

Cream cheese would work well. Basil would be a great addition! You could add in some parsley too and a little lemon! Dill and lemon would be good too!
I’m looking forward to trying this sandwich with herbed cream cheese. Saw the other comments about not being able to find alfalfa sprouts in 2016. We have noticed this also in Oklahoma this year. However, we can get broccoli sprouts and Onion sprouts. Just interesting that alfalfa sprouts are hard to find . . .

There is a sandwich called a “Bible Bread Sandwich”. You use Spike seasoning “without salt” cabbage slaw, unsalted sunflower seeds, a white cheese, and sprouts on a pita, or wrap. Does anyone have a great recipe for this sandwich??? I use to buy them at a Herb Shop. They were awesome! A couple recipes online are close.

I just made this for my sister and I for lunch today. It was very very tasty! I added two separate dressings, cilantro jalapeño and a lemon tahini to the ghost cheese. It really kicked up the flavor! I also subbed rocket for the sprouts and a bib lettuce for for the other greens. All in all it was great! Will definitely make again on a wrap or other bread.
